Day 1: Sausage and Veggie Breakfast Casserole

Rise and shine.  A new day has dawned.

Cereal is the breakfast of choice…at least where my kids are concerned.

Sometimes I indulge in a bowl of Honey Nut Cheerios with them.  Other days I’m simply not in the mood.

Know what I mean?

The mere thought of bacon, eggs, biscuits and hashbrowns has you salivating.

I have mornings like those too.

And when the breakfast dish is a casserole, well, my life was just made so much easier.

We’re talking about a dish that when served with a tall glass of OJ or your fruit juice of choice, the entire food pyramid is being arranged at your place setting.

Protein? Check.

Grains?  Check.

Fruits?  Check.

Vegetables?  Check.

Dairy?  Check.

And it is so good.  I know that I’ve raved about other recipes before, but those all pale in comparison.

Seriously, people.

I am not kidding.

Hubs and I just may have eaten half of the 9×13 dish ourselves…I’m just saying that it was possible.  {wink, wink}

Sausage and Veggie Breakfast Casserole

3 oz sausage (I used an all natural brand with no msg/preservatives)

6 oz ground turkey (I used ground venison)

1 med onion, chopped

1/2 organic red pepper, diced

1/2 organic green pepper, diced

1 Tbsp minced garlic (I used fresh)

1 c. baby spinach (I forgot this at the store- next time!)

4 slices whole wheat bread, cubed

4 eggs (I used fresh farm eggs)

2/3 c. milk (I used whole milk)

1/2 tsp. ground mustard

1/2 tsp. salt

black pepper to taste

1 c. colby cheese, shredded

1 c. sharp cheese, shredded

Preheat oven to 350°. Begin heating an electric skillet or skillet on the stove for the meat and veggies. Begin browning sausage and ground meat. While meat is browning, butter a 9×13 baking dish. Single layer the bottom of dish with cubed bread. In a bowl, whisk eggs, milk, ground mustard, salt, and pepper. Set aside.

When meat is browned, add diced onion and peppers. Saute. When veggies are tender, add garlic and spinach leaves. Cook until the spinach begins to wilt.

Layer half of the meat/veggie mixture on the bread cubes, followed by half of the egg/spices, and then half of the cheese. Repeat layers. Cover and bake for 25-30 minutes and then remove foil. Cook for 10 more minutes to allow the cheese to brown a little. Serve.

Shut the front door, draw the curtains closed, and stuff rags in any cracks.  If you don’t, the whole neighborhood will be on your doorstep.

You just stumbled upon the best, homemade, well-balanced breakfast.  Ever.

It should be eaten with solid gold forks.  Seriously.

It makes the original breakfast of champions, ya know, the one in the orange box, seem so …ordinary.

And besides, cereal is so overrated at my house. 😉
